A hearty and nutritious dairy-free ham and bean soup.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound ham, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Add garlic and ham, cook for another 3 minutes.
  4. Stir in white beans, vegetable broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove bay leaf and season with salt and pepper.
  7. Serve hot.
