- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound ham, diced
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add garlic and ham, cook for another 3 minutes.
- Stir in white beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove bay leaf and season with salt and pepper.
- Serve hot.
