A hearty and flavorful dairy-free lasagna soup that captures all the classic flavors of lasagna without any dairy.

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup dairy-free cheese, shredded
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion, garlic, and bell pepper. Cook for 5 minutes.
  4. Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add broken lasagna noodles and cook for 10 minutes until tender.
  7. Serve hot, topped with dairy-free cheese and fresh basil.
