  • 1 whole duck (about 5 lbs)
  • 2 oranges, juiced and zested
  • 1 cup chicken stock
  • 2 tbsp butter
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 shallot, minced

Instructions

  1. Preheat oven to 375°F.
  2. Season the duck with salt and pepper.
  3. Heat olive oil in a pan and sear the duck until golden.
  4. Transfer the duck to the oven and roast for 45 minutes.
  5. In the same pan, sauté shallots until soft.
  6. Add orange juice, zest, sugar, and chicken stock. Simmer until reduced by half.
  7. Stir in butter to finish the sauce.
  8. Slice the duck and serve with the orange sauce.
