- 1 whole duck (about 5 lbs)
- 2 oranges, juiced and zested
- 1 cup chicken stock
- 2 tbsp butter
- 1 tbsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 shallot, minced
- Preheat oven to 375°F.
- Season the duck with salt and pepper.
- Heat olive oil in a pan and sear the duck until golden.
- Transfer the duck to the oven and roast for 45 minutes.
- In the same pan, sauté shallots until soft.
- Add orange juice, zest, sugar, and chicken stock. Simmer until reduced by half.
- Stir in butter to finish the sauce.
