Ingredients

  • 2 lbs chicken thighs
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add diced tomatoes, onion, garlic, chicken broth, Italian seasoning, salt, and pepper.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred chicken before serving.

Notes

  • Serve with rice or pasta.
  • Can substitute chicken with beef or vegetables.
  • Store leftovers in the refrigerator for up to 3 days.
