A nutritious and balanced Buddha Bowl packed with fresh vegetables, grains, and protein for a wholesome meal.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted sweet potatoes
  • 1 cup steamed broccoli
  • 1/2 avocado, sliced
  • 1/4 cup chickpeas
  • 1 tbsp tahini dressing
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions.
  2. Roast sweet potatoes with olive oil, salt, and pepper at 400°F for 20 minutes.
  3. Steam broccoli for 5 minutes until tender.
  4. Assemble quinoa, sweet potatoes, broccoli, avocado, and chickpeas in a bowl.
  5. Drizzle with tahini dressing and serve.
