A hearty and flavorful soup inspired by traditional cabbage rolls. Easy to make and packed with nutrients.

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 small cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (28 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion, garlic, carrots, and celery. Cook for 5 minutes.
  4. Stir in cabbage, diced tomatoes, beef broth, paprika, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add cooked rice and simmer for another 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot.
