Ingredients

  • 1 medium cabbage, chopped
  • 4 large tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 cup vegetable broth
  • 1 tbsp tomato paste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft.
  3. Stir in diced tomatoes and tomato paste, cook for 5 minutes.
  4. Add chopped cabbage, salt, pepper, and paprika.
  5. Pour in vegetable broth, stir well.
  6. Cover and simmer for 20-25 minutes until cabbage is tender.
  7. Adjust seasoning if needed and serve hot.
