- 1 lb chicken breast, diced
- 1 cup white rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced

- 1 tbsp olive oil
