Ingredients

  • 1 lb chicken breast, diced
  • 1 cup white rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  3. Add chicken and cook until no longer pink.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in rice, salt, and pepper.
  6. Reduce heat and simmer for 20 minutes until rice is tender.
  7. Serve hot.

Notes

  • Use leftover cooked chicken for quicker prep.
  • Add more broth if you prefer a thinner soup.
