A flavorful and comforting chicken tortilla soup with a blend of spices, vegetables, and crispy tortilla strips.

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • 1/4 cup fresh cilantro, chopped
  • 4 corn tortillas, cut into strips and baked until crisp

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Add diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper. Bring to a simmer.
  4. Add chicken breasts and cook for 15-20 minutes until fully cooked.
  5. Remove chicken, shred it, and return to the pot.
  6. Stir in corn and simmer for 5 minutes.
  7. Serve topped with avocado, cilantro, crisp tortilla strips, and a lime wedge.

Notes

  • For extra spice, add chopped jalapeños.
  • Use store-bought tortilla chips if short on time.
  • Leftovers can be stored in the fridge for up to 3 days.
