  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (optional)

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in diced tomatoes, tomato paste, chicken broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add broken lasagna noodles and cook until tender (about 10 minutes).
  6. Serve hot, topped with mozzarella, Parmesan, and fresh basil.

  • For a vegetarian version, replace ground beef with lentils or mushrooms.
