  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add ground beef, oregano, basil, and red pepper flakes. Cook until beef is browned.
  3. Stir in crushed tomatoes and chicken broth. Bring to a boil.
  4. Add broken lasagna noodles and simmer until tender, about 10-12 minutes.
  5. In a bowl, mix ricotta, Parmesan, and half the mozzarella.
  6. Drop spoonfuls of the cheese mixture into the soup. Stir gently.
  7. Season with salt and pepper. Serve topped with remaining mozzarella and fresh basil.

  • Use ground turkey for a lighter version.
