Quick and simple shrimp meal prep boxes for a healthy week.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup cooked quinoa
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shrimp with olive oil, garlic, paprika, salt, and pepper.
  3. Spread shrimp on a baking sheet.
  4. Add broccoli and bell peppers to the baking sheet.
  5. Bake for 15 minutes or until shrimp are opaque.
  6. Prepare meal prep boxes with cooked quinoa and the baked shrimp and vegetables.

Notes
