  • 2 filet mignon steaks (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup red wine
  • 1/2 cup beef broth
  • 1 shallot, minced
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Season the filet mignon with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear steaks for 4-5 minutes per side for medium-rare.
  4. Remove steaks and let rest.
  5. In the same skillet, melt butter and sauté shallots.
  6. Add red wine, beef broth, and thyme.
  7. Simmer until sauce thickens, about 5 minutes.
  8. Pour sauce over steaks before serving.
