  • 200g dark chocolate (70% cocoa)
  • 150g unsalted butter
  • 150g granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 30g cocoa powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 175°C (350°F). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
  3. Whisk the sugar and eggs in a separate bowl until pale and slightly thickened.
  4. Add the melted chocolate mixture to the egg mixture, stirring until fully combined.
  5. Sift in the cocoa powder and add vanilla extract and salt. Fold gently until smooth.
  6. Pour the batter into the prepared pan and bake for 25–30 minutes or until the edges are set but the center is still slightly soft.
  7. Let the torte cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Dust with cocoa powder or powdered sugar before serving.
