- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh basil
- Brown the ground beef in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Stir in Italian seasoning, salt, and pepper.
- Pour in crushed tomatoes, beef broth, and water. Bring to a boil.
- Add broken lasagna noodles and simmer for 15 minutes.
- In a bowl, mix ricotta, mozzarella, and Parmesan.
- Serve soup hot with a dollop of cheese mixture and fresh basil.
Notes
- Let soup cool completely before freezing.
- Store in airtight containers for up to 3 months.
- Reheat on the stove over low heat, adding water if needed.
