A hearty and convenient lasagna soup you can prepare ahead and freeze for later.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh basil

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in Italian seasoning, salt, and pepper.
  4. Pour in crushed tomatoes, beef broth, and water. Bring to a boil.
  5. Add broken lasagna noodles and simmer for 15 minutes.
  6. In a bowl, mix ricotta, mozzarella, and Parmesan.
  7. Serve soup hot with a dollop of cheese mixture and fresh basil.

Notes

  • Let soup cool completely before freezing.
  • Store in airtight containers for up to 3 months.
  • Reheat on the stove over low heat, adding water if needed.
