A simple recipe for fudgy brownie cookies that combines the best of both worlds—chewy brownies and soft cookies.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix melted butter and sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture and stir well.
  5. Gradually fold in the dry ingredients until just combined.
  6. Stir in the chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes until the edges are set but the centers are still soft.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Do not overbake—the cookies will firm up as they cool.
  • For extra fudginess, slightly underbake by 1 minute.
  • Store in an airtight container for up to 3 days.
