A rich and creamy soup with the flavors of lasagna, garlic butter, and cheese.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef in a large pot. Drain excess fat.
  2. Add onion and garlic, cook until softened.
  3. Stir in butter until melted.
  4. Pour in chicken broth, diced tomatoes, tomato paste, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Add broken lasagna noodles and cook until tender (about 10 minutes).
  6. Reduce heat, stir in heavy cream.
  7. Top with mozzarella and Parmesan cheese. Cover until cheese melts.
  8. Garnish with fresh basil before serving.

  • Use gluten-free noodles if needed.
  • Substitute ground turkey for a lighter option.
