Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. Cream butter and brown sugar until fluffy. Beat in egg, molasses, and coffee powder.
  4. Gradually mix in dry ingredients until combined.
  5. In a small bowl, mix granulated sugar and cinnamon for rolling.
  6. Scoop dough, roll into balls, then coat in cinnamon sugar.
  7. Place on baking sheets, flatten slightly, and bake for 10-12 minutes.
  8. Let cool before serving.
