  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix gluten-free graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and sour cream until combined.
  7. Pour cream cheese mixture over the crust.
  8. Bake for 55-60 minutes until set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
