A gluten-free version of the classic chicken parmesan, featuring crispy breaded chicken topped with marinara sauce and melted cheese.

  • 2 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness.
  3. In a bowl, mix breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Beat the egg in a separate bowl.
  5. Dip each chicken breast in the egg, then coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and cook the chicken for 3-4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish, top with marinara sauce and mozzarella cheese.
  8. Bake for 15-20 minutes until the cheese melts and the chicken is fully cooked.

Notes

  • Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
  • For extra crispiness, broil for the last 2-3 minutes.
  • Leftovers can be refrigerated for up to 3 days.
