A comforting gluten-free lasagna soup with rich tomato flavor and cheesy goodness.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups gluten-free chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz gluten-free lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion and garlic, cook until softened.
  4. Pour in chicken broth and crushed tomatoes.
  5. Stir in basil, oregano, salt, and pepper.
  6. Bring to a boil, then add broken lasagna noodles.
  7. Reduce heat and simmer for 15 minutes or until noodles are tender.
  8. Serve hot topped with ricotta, mozzarella, and Parmesan cheese.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Substitute ground turkey for a lighter version.
