Delicious gluten-free lemon bars with a tangy lemon filling and a buttery crust.

Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour and powdered sugar.
  3. Add softened butter and blend until crumbly.
  4. Press the mixture into a greased baking pan.
  5. Bake for 15 minutes until lightly golden.
  6. In another bowl, whisk eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
  7. Pour the lemon mixture over the baked crust.
  8. Bake for an additional 20 minutes until set.
  9. Cool completely before slicing into bars.
