- 1 pound ham, diced
- 1 cup dried navy beans, soaked overnight
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
- In a large pot, sauté the onion, carrots, and celery until soft.
- Add the garlic and cook for another minute.
- Stir in the ham and soaked beans.
- Pour in the chicken broth and add the bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove the bay leaf and season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, mash some beans against the side of the pot.
- Store leftovers in the refrigerator for up to 3 days.
