A hearty and comforting soup made with ham and beans.

Ingredients

  • 1 pound ham, diced
  • 1 cup dried navy beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until soft.
  2. Add the garlic and cook for another minute.
  3. Stir in the ham and soaked beans.
  4. Pour in the chicken broth and add the bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Remove the bay leaf and season with salt and pepper.
  7. Serve hot.

Notes

  • For a thicker soup, mash some beans against the side of the pot.
  • Store leftovers in the refrigerator for up to 3 days.
  • This soup freezes well for future meals.
