A classic Swiss dish made with melted Gruyere cheese, perfect for sharing.

Ingredients

  • 8 oz Gruyere cheese, grated
  • 8 oz Emmental cheese, grated
  • 1 cup dry white wine
  • 2 cloves garlic, halved
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp kirsch (cherry brandy)
  • Freshly ground black pepper, to taste
  • Freshly grated nutmeg, to taste
  • Crusty bread, for dipping

Instructions

  1. Rub the inside of a fondue pot with garlic halves.
  2. Pour in the wine and heat until warm.
  3. Gradually add the grated cheeses, stirring constantly until melted.
  4. Mix the cornstarch and kirsch, then stir into the cheese mixture.
  5. Add lemon juice, pepper, and nutmeg to taste.
  6. Serve with cubed bread for dipping.

Notes

  • Use a good quality dry white wine.
  • Stir continuously to avoid burning.
  • Adjust seasoning to your preference.
