- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1 cup whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 4 large eggs, separated
- 1 cup grated Gruyère cheese
- 1/4 tsp cream of tartar
- Preheat oven to 375°F. Butter a soufflé dish and dust with grated cheese.
- Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Cook until thickened, about 3 minutes.
- Remove from heat. Stir in salt, pepper, and nutmeg. Let cool slightly.
- Whisk egg yolks into the sauce one at a time. Stir in Gruyère cheese.
- In a separate bowl, beat egg whites and cream of tartar until stiff peaks form.
- Gently fold egg whites into the cheese mixture.
- Pour into the prepared dish. Bake for 25-30 minutes until puffed and golden.
- Serve immediately.
