- 1 pound dried navy beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 pound ham, cubed
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- Rinse and soak the beans overnight.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Stir in the ham, broth, bay leaf, and thyme.
- Add soaked beans and bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours until beans are tender.
- Season with salt and pepper.
- Remove bay leaf before serving.
