A hearty and comforting ham and bean soup that warms you up.

Ingredients

  • 1 pound dried navy beans
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 pound ham, cubed
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the beans overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Add garlic and cook for another minute.
  5. Stir in the ham, broth, bay leaf, and thyme.
  6. Add soaked beans and bring to a boil.
  7. Reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  8. Season with salt and pepper.
  9. Remove bay leaf before serving.

Notes

  • Use leftover ham for added flavor.
