Ingredients

  • 1 ham bone
  • 2 cups dried navy beans
  • 8 cups water
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak beans overnight in water.
  2. Drain and rinse beans.
  3. In a large pot, combine ham bone, soaked beans, and water.
  4. Add onion, carrots, celery, garlic, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Remove ham bone, shred the meat, and return it to the pot.
  7. Season with salt and pepper.
  8. Simmer for another 30 minutes.
  9. Serve hot.
