Ingredients

  • 1 cup diced ham
  • 2 cups white beans, soaked
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in the ham and thyme.
  4. Add soaked beans and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Season with salt and pepper.
  7. Serve warm.

Notes

  • For a thicker soup, use mashed beans.
  • Can use leftover ham.
