- 1 onion, diced
- 3 cloves garlic, minced
- 1 lb lean ground turkey
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1 (28 oz) can crushed tomatoes
- 4 cups low-sodium chicken broth
- 2 cups chopped spinach
- 8 whole wheat lasagna noodles, broken into pieces
- 1/2 cup part-skim ricotta cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add ground turkey, oregano, basil, and red pepper flakes. Cook until turkey is browned.
- Stir in crushed tomatoes and chicken broth. Bring to a boil.
- Add broken lasagna noodles and cook until tender, about 10 minutes.
- Stir in spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve with a dollop of ricotta and a sprinkle of Parmesan.
