Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 lb lean ground turkey
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1 (28 oz) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups chopped spinach
  • 8 whole wheat lasagna noodles, broken into pieces
  • 1/2 cup part-skim ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add ground turkey, oregano, basil, and red pepper flakes. Cook until turkey is browned.
  3. Stir in crushed tomatoes and chicken broth. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in spinach and cook until wilted.
  6. Season with salt and pepper to taste.
  7. Serve with a dollop of ricotta and a sprinkle of Parmesan.

  • Use whole wheat noodles for extra fiber.
