A nutritious and easy-to-make quinoa salad packed with fresh vegetables and a light dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in 2 cups of water for 15 minutes.
  3. Let quinoa cool.
  4. Mix in cucumber, bell pepper, red onion, and parsley.
  5. Whisk olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over the salad and toss.
  7. Chill for 30 minutes before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Add feta cheese for extra flavor.
  • Substitute lemon juice with lime for a different taste.
