A quick and nutritious stir fry featuring chicken and fresh vegetables.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add chicken slices and cook until no longer pink.
  4. Add mixed vegetables and stir fry for 5-7 minutes.
  5. Pour in soy sauce and mix well.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes
