  • 1 lb beef stew meat, cubed
  • 1 cup pearl barley
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 2 cups water
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Add onions, carrots, and celery. Cook until vegetables soften.
  4. Pour in beef broth and water. Bring to a boil.
  5. Stir in barley, salt, pepper, and bay leaf.
  6. Reduce heat to low, cover, and simmer for 45 minutes.
  7. Remove bay leaf before serving.
