A fusion pasta dish combining creamy carbonara with spicy miso for a rich umami flavor.

Ingredients

  • 200g spaghetti
  • 2 large eggs
  • 50g grated Parmesan
  • 1 tbsp white miso paste
  • 1 tsp chili flakes
  • 2 cloves garlic, minced
  • 100g pancetta, diced
  • 1 tbsp olive oil
  • Black pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente.
  2. Whisk eggs, Parmesan, and miso in a bowl.
  3. Fry pancetta in olive oil until crispy. Add garlic and chili flakes.
  4. Drain pasta, reserving 1/2 cup water. Add pasta to the pan.
  5. Remove pan from heat. Stir in egg mixture quickly to avoid scrambling.
  6. Add reserved water if needed to loosen the sauce.
  7. Serve with extra Parmesan and black pepper.

Notes

  • Use fresh eggs for the best texture.
  • Adjust chili flakes to your spice preference.
  • Replace pancetta with mushrooms for a vegetarian version.
