- 1 lb dried split peas
- 6 cups water
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 ham bone or 1 cup diced ham
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- Rinse the split peas under cold water.
- In a large pot, combine peas, water, onion, carrots, celery, garlic, ham bone, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
- Remove the ham bone, shred any meat, and return it to the pot.
- Discard the bay leaf and serve hot.
Notes
- Soak peas overnight for faster cooking.
- Add more water if the soup thickens too much.
- Store leftovers in the fridge for up to 3 days.
