A hearty and nutritious split pea soup perfect for cold days.

Ingredients

  • 1 lb dried split peas
  • 6 cups water
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 ham bone or 1 cup diced ham
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Rinse the split peas under cold water.
  2. In a large pot, combine peas, water, onion, carrots, celery, garlic, ham bone, salt, pepper, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
  4. Remove the ham bone, shred any meat, and return it to the pot.
  5. Discard the bay leaf and serve hot.

Notes

  • Soak peas overnight for faster cooking.
  • Add more water if the soup thickens too much.
  • Store leftovers in the fridge for up to 3 days.
