Ingredients

  • 4 cod fillets (6 oz each)
  • 1/2 cup breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix breadcrumbs, parsley, thyme, rosemary, lemon zest, salt, and pepper in a bowl.
  3. Brush cod fillets with olive oil.
  4. Press the herb mixture onto the top of each fillet.
  5. Place fillets on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the fish flakes easily.
  7. Garnish with lemon slices before serving.
