2 cups chopped kale
1 cup diced carrots
1 cup diced celery
1 cup diced zucchini
1 can (15 oz) chickpeas, drained and rinsed
1 can (14.5 oz) diced tomatoes
6 cups low-sodium vegetable broth
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tbsp olive oil
Instructions
Heat olive oil in a large pot over medium heat.
Add carrots, celery, and zucchini. Cook for 5 minutes.
Stir in kale and cook for another 2 minutes.
Add chickpeas, diced tomatoes, and vegetable broth.
Season with garlic powder, onion powder, and black pepper.
