Ingredients

  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced zucchini
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups low-sodium vegetable broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, celery, and zucchini. Cook for 5 minutes.
  3. Stir in kale and cook for another 2 minutes.
  4. Add chickpeas, diced tomatoes, and vegetable broth.
