  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, sauté the onion, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Add the ham, beans, chicken broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Check beans for tenderness. If needed, cook longer.
  7. Remove bay leaf and season with salt and pepper.
  8. Serve hot.
