- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp chopped fresh basil
- Set the Instant Pot to sauté mode. Add the ground beef and cook until browned.
- Add the onion, garlic, Italian seasoning, salt, and pepper. Cook for 2 minutes.
- Stir in the crushed tomatoes and beef broth.
- Add the broken lasagna noodles and press them into the liquid.
- Close the lid and set to manual high pressure for 5 minutes.
- Quick release the pressure when done.
- Stir in the ricotta and mozzarella until melted.
- Garnish with fresh basil before serving.
Notes
- Use gluten-free noodles for a gluten-free version.
- Add extra vegetables like spinach or zucchini if desired.
- Store leftovers in the fridge for up to 3 days.
