A hearty and comforting lasagna soup made quickly in the Instant Pot with layers of flavor.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Set the Instant Pot to sauté mode. Add the ground beef and cook until browned.
  2. Add the onion, garlic, Italian seasoning, salt, and pepper. Cook for 2 minutes.
  3. Stir in the crushed tomatoes and beef broth.
  4. Add the broken lasagna noodles and press them into the liquid.
  5. Close the lid and set to manual high pressure for 5 minutes.
  6. Quick release the pressure when done.
  7. Stir in the ricotta and mozzarella until melted.
  8. Garnish with fresh basil before serving.

Notes

  • Use gluten-free noodles for a gluten-free version.
  • Add extra vegetables like spinach or zucchini if desired.
  • Store leftovers in the fridge for up to 3 days.
