- 2 cups almond flour
- 1/4 cup powdered erythritol
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk
- Preheat oven to 350°F (175°C) and grease a donut pan.
- In a bowl, mix almond flour, erythritol, baking powder, and salt.
- Add eggs, coconut oil, vanilla, and almond milk. Stir until smooth.
- Spoon batter into the donut pan, filling each cavity 3/4 full.
- Bake for 12-15 minutes or until golden.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- For glaze, mix powdered erythritol with a little almond milk.
- Substitute coconut flour for almond flour if needed, but adjust liquids.
