A low-carb alternative to traditional fried rice, using cauliflower for a keto-friendly dish.

Ingredients

  • 1 medium head cauliflower, grated or riced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 eggs, beaten
  • 1 tbsp soy sauce (or coconut aminos for gluten-free)
  • 1/2 cup frozen peas and carrots (optional)
  • Salt and pepper to taste
  • 1 green onion, sliced for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and onion, sauté until fragrant.
  3. Stir in cauliflower rice and cook for 5-7 minutes until tender.
  4. Push the cauliflower to one side and pour beaten eggs into the other side.
  5. Scramble the eggs until cooked, then mix with the cauliflower.
  6. Add soy sauce, peas, and carrots if using. Stir well.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions before serving.

Notes

  • Use fresh or frozen riced cauliflower for convenience.
  • Adjust soy sauce to taste if you prefer less salt.
  • For extra protein, add cooked chicken, shrimp, or tofu.
