A low-carb twist on classic mac and cheese, using cauliflower in place of pasta for a keto-friendly dish.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam cauliflower florets for 5 minutes until slightly tender.
  3. Drain and place cauliflower in a baking dish.
  4. In a saucepan, melt butter over medium heat.
  5. Add heavy cream, garlic powder, salt, pepper, and paprika. Stir well.
  6. Add shredded cheese and stir until melted.
  7. Pour cheese sauce over cauliflower.
  8. Bake for 15 minutes until bubbly.

Notes

  • Use fresh cauliflower for best texture.
  • Add cooked bacon for extra flavor.
