Keto Lemon Bars are a low-carb dessert made with almond flour and fresh lemon juice.

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup granulated erythritol
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted coconut oil, erythritol, and salt.
  3. Press the mixture into the bottom of a greased baking dish.
  4. Bake for 10 minutes.
  5. In another bowl, whisk eggs, lemon juice, lemon zest, and baking powder.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20 minutes.
  8. Allow to cool before cutting into squares.
