Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup erythritol sweetener
  • 1 teaspoon vanilla extract
  • 16 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon lemon juice

Instructions

  1. In a bowl, combine almond flour, melted butter, and erythritol.
  2. Press the mixture into the bottom of a springform pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth.
  4. Add heavy cream, powdered erythritol, vanilla extract, and lemon juice. Mix until well combined.
  5. Pour the cheesecake filling over the crust.
  6. Refrigerate for at least 4 hours or until set.
  7. Slice and serve chilled.

Notes

  • Use room temperature cream cheese for a smoother texture.
