Ingredients

  • 4 cups fresh spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic. Cook until soft.
  3. Add diced chicken breasts. Cook until no longer pink.
  4. Pour in chicken broth. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add fresh spinach and stir until wilted.
  7. Stir in heavy cream, salt, pepper, and paprika.
  8. Simmer for 5 more minutes. Serve hot.
