A quick and healthy keto-friendly omelette packed with spinach and mushrooms.

Ingredients

  • 2 large eggs
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup mushrooms, sliced
  • 1 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp grated cheese (optional)

Instructions

  1. Heat butter in a non-stick pan over medium heat.
  2. Add mushrooms and sauté for 2 minutes until softened.
  3. Add spinach and cook for another minute until wilted.
  4. Whisk eggs with salt and pepper in a bowl.
  5. Pour the eggs over the spinach and mushrooms.
  6. Cook for 2-3 minutes until the edges set.
  7. Flip the omelette and cook for another minute.
  8. Sprinkle cheese if using, fold, and serve hot.

Notes

  • Use a non-stick pan for easy flipping.
