A simple and delicious keto-friendly dish featuring chicken breasts stuffed with spinach and cheese.

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. Mix spinach, mozzarella, cream cheese, garlic, salt, and pepper in a bowl.
  4. Stuff the mixture into the chicken pockets.
  5. Secure with toothpicks if needed.
  6. Heat olive oil in a skillet over medium heat.
  7. Sear chicken for 2-3 minutes per side until golden.
  8. Transfer to a baking dish and bake for 20-25 minutes.
  9. Let rest for 5 minutes before serving.
