A delicious and healthy keto-friendly dish featuring portobello mushrooms stuffed with spinach and cheese.

Ingredients

  • 4 large portobello mushrooms
  • 2 cups fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms and remove stems.
  3. Heat olive oil in a pan and sauté garlic for 1 minute.
  4. Add spinach and cook until wilted.
  5. Mix spinach with mozzarella, parmesan, salt, and pepper.
