A warm spinach salad with crispy bacon, perfect for a keto diet.

Ingredients

  • 4 cups fresh spinach
  • 6 slices bacon
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook bacon in a skillet until crispy. Remove and drain on paper towels.
  2. Chop bacon into small pieces.
  3. Heat olive oil in the same skillet over medium heat.
  4. Add spinach and sauté for 1-2 minutes until wilted.
  5. Add apple cider vinegar, salt, and pepper. Stir well.
  6. Remove from heat and top with bacon, red onion, and feta cheese.
  7. Serve warm.
