  • 2 Meyer lemons, sliced
  • 6 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken with olive oil, salt, pepper, and thyme.
  3. Stuff cavity with lemon slices and minced garlic.
  4. Place chicken in a roasting pan.
  5. Roast for 1 hour or until internal temperature reaches 165°F (74°C).
