A simple and healthy lemon herb chicken meal prep recipe perfect for busy weekdays.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper in a bowl.
  3. Coat chicken breasts with the marinade.
  4. Place chicken on a baking sheet and bake for 25 minutes.
  5. Let chicken rest for 5 minutes before slicing.
  6. Divide cooked quinoa, steamed broccoli, and sliced chicken into meal prep containers.
